Ingredients

  • 2 cups cooked white rice
  • 2 tablespoons extra-virgin olive oil
  • 2 cloves garlic, minced
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup toasted pine nuts
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons chopped fresh basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 cups fresh vegetables of your choice, such as diced peppers, mushrooms, or zucchini
  • 1 cup cooked protein of your choice, such as grilled chicken, shrimp, or tofu

Steps

  1. In a food processor, combine the garlic, Parmesan, pine nuts, lemon juice, basil, salt, and pepper. Process until a paste forms.
  2. In a large bowl, combine the cooked rice, olive oil, and pesto paste. Mix until everything is evenly combined.
  3. Add in the vegetables and protein of your choice. Mix until everything is evenly combined.
  4. Divide the mixture into 4 bowls and serve.
