A traditional Japanese omelette made with eggs, heart-healthy dashi, and a variety of ingredients.

Did you know?

Tamagoyaki actually translates into 'grilled egg' in Japanese!

Tamagoyaki is a traditional Japanese omelette consisting of eggs, heart-healthy dashi, and a variety of ingredients. The subtle sweetness of the dish pairs perfectly with a cup of green tea, making it an ideal way to start off a lazy weekend morning. Tamagoyaki is created through the skillful art of rolling multiple thin omelettes over one another, creating thin and flavorful layers. It's a dish that requires practice – and plenty of patience – to perfect, but it's well worth the effort in the end.

Ingredients

  • 3 eggs
  • 2 tbsp. dashi
  • 1/2 tsp. sugar
  • 1/2 tsp. salt
  • 1 tsp. vegetable oil
  • 1/4 cup finely chopped vegetables (onion, carrots, etc.)

Steps

  1. Beat the eggs in a bowl.
  2. Add the dashi, sugar, and salt, and stir until combined.
  3. Heat a non-stick pan over medium heat and add the oil.
  4. Smooth out the egg mixture in the pan, sprinkle with the chopped vegetables, and turn the heat to low.
  5. Gently roll the cooked omelette onto itself and let it cook for a few more seconds.
  6. Remove the omelette from the pan and let it cool for a few minutes.
  7. Gently roll the omelette into bite-sized pieces and arrange on a plate.

Add some extra love

For a fun twist, try adding finely chopped green onion, shredded seaweed, or grated ginger to the omelette mix.
