Suya Spice is a popular seasoning blend from the Northern regions of Nigeria and Ghana. It is best known as the flavoring for Nigerian-style kebabs - chunks of chicken, beef, lamb, or fish, infused with robust seasoning, and chargrilled to perfection. My take on these kebabs features succulent chicken marinated in a blend of creamy tahini, freshly squeezed lime juice, bright cilantro, and my own special Suya Spice mix. Grill these kebabs on your outdoor BBQ, or make them on the stove top - they are sure to be a crowd favorite!

Ingredients

  • 4-5 chicken breasts, cubed
  • 1/4 cup tahini
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon chile powder
  • 1/4 teaspoon smoked paprika
  • 1 teaspoon fresh ginger, minced
  • juice of 1 lime
  • 2 tablespoons cilantro, roughly chopped
  • pinch of sea salt
  • 2 tablespoons olive oil

Steps

  1. In a large bowl, mix together all ingredients, except for the chicken, to create the marinade. Mix well until all ingredients are well incorporated.
  2. Add cubed chicken breasts to the marinade, making sure each piece us properly coated. Cover with a lid or plastic wrap and place in the fridge for at least 2 hours or overnight.
  3. When ready to cook, heat the grill or stove top to medium-high heat. Thread chicken pieces onto skewers. Grill on each side for 4-5 minutes, or until fully cooked.
  4. Remove from the grill and serve immediately with a side of rice and vegetables of your choice.
