My specialty dish of suya-spiced Ghanaian fritters is inspired by the delicious street food I once had in my home country of Ghana. The combination of spicy and sweet flavors is sure to tantalize your taste buds. Onions, tomatoes, and carrots are the base of this dish, and lots of herbs and spices, like ginger, garlic, cumin, and chili, add an extra kick of flavor. The fritters are best served with a side of pickled vegetables, yogurt, and toasted coconut.

Ingredients

  • 1 onion, diced
  • 2 tomatoes, diced
  • 1 carrot, grated
  • 2 tablespoons ginger, minced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon coriander
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil, for frying

Steps

  1. In a bowl, combine the onions, tomatoes, carrot, ginger, garlic, cumin, chili powder, and coriander. Mix until all of the ingredients are fully combined.
  2. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually pour the wet ingredients into the dry ingredients and mix until everything is fully combined and a dough forms.
  3. Roll the dough into small balls about 1 inch in diameter.
  4. In a heavy bottomed pot, heat the oil over medium-high heat until a small piece of dough sizzles and floats when dropped into the oil.
  5. Gently lower the dough balls into the hot oil and fry until golden brown, flipping once about halfway through the cooking time.
  6. Transfer the fried fritters to a plate lined with paper towels to absorb any excess oil.
