Tuscan breakfasts can be surprisingly rich and filling. This traditional dish is slowly simmered over gentle heat to create a flavourful and hearty start to your day. Enjoyed with some freshly-baked crusty bread, it's sure to be a winner!

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1/2 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 large ripe tomatoes, chopped
  • 300 g pancetta, diced
  • 300 g white beans, cooked
  • 2 tablespoons chopped parsley
  • Salt and freshly ground black pepper
  • 4 lightly-beaten eggs

Steps

  1. Heat the olive oil in a large frying pan over medium heat.
  2. Add the onion and garlic and cook for about 2 minutes until softened.
  3. Add the tomatoes and cook for about 5 minutes until softened.
  4. Add the pancetta and beans and cook for about 5 minutes.
  5. Add the parsley and season with salt and pepper to taste.
  6. Add the eggs and stir gently to combine.
  7. Lower the heat to low and cook for about 10 minutes until the eggs are just set.
  8. Serve warm with freshly-baked crusty bread

Add some extra love

For an extra flavour kick, add a teaspoon of smoked paprika to the pan before adding the eggs.
