This delicious and healthy breakfast dish will give you a great start to the day. It features tomatoes, eggs, onions, and a whole wheat tortilla, all lightly spiced with fresh chili. Enjoy this West African-inspired egg wrap and get your morning boost of energy!

Ingredients

  • 2 large whole wheat tortillas
  • 1 tablespoon olive oil
  • 2 large eggs
  • 1/2 onion, diced
  • 1/4 teaspoon chili powder
  • 1 cup cherry tomatoes, sliced
  • Salt and pepper to taste

Steps

  1. Heat the olive oil in a medium-sized skillet over medium heat.
  2. Beat the eggs in a small bowl. Add the beaten eggs to the skillet and cook, stirring occasionally, until the egg is scrambled. Add in the onions and chili powder, and continue to cook until the onions are tender.
  3. Place the tortillas on a flat surface and top with the scrambled eggs and onions. Top with the tomatoes and season with salt and pepper.
  4. Carefully fold the tortillas into wraps and serve hot.
