In this lesson, we will cover basic recipes and dishes that every home cook should have in their repertoire. These fundamental techniques will allow you to form a strong foundation from which you can build on when creating a diverse range of meals.

Cooking Rice

To cook rice, follow these simple steps:

  1. Rinse the rice under cold water until the water runs clear.
  2. Add rice and water in a 1:2 ratio (1 cup rice to 2 cups water) to a pot with a tight-fitting lid.
  3. Bring the water to a boil, then reduce the heat to low and cover the pot. Cook for the indicated time according to the type of rice.
  4. Turn off the heat and let it stand, covered, for an additional 10 minutes. Fluff rice with a fork and serve.

Cooking Pasta

For perfectly cooked pasta:

  1. Bring a large pot of salted water to a rolling boil.
  2. Add the pasta and stir to prevent sticking.
  3. Cook the pasta, stirring occasionally, according to the package instructions or until al dente (tender, but with a slight bite).
  4. Drain the pasta, reserving some pasta water for sauce consistency.

Roasting Vegetables

To roast vegetables:

  1. Preheat the oven to 425°F (220°C). Cut the vegetables into uniform, bite-sized pieces.
  2. Toss the vegetables with olive oil, salt, and pepper. Optionally, add your favorite herbs and spices.
  3. Spread the vegetables evenly on a baking sheet, ensuring they do not overlap.
  4. Roast the vegetables in the oven until tender and slightly browned, stirring occasionally. Roasting time will vary based on the type of vegetable.

Simple Soup

Create a simple vegetable soup using these steps:

  1. Sauté chopped onions, carrots, and celery in oil or butter until slightly softened.
  2. Add a minced garlic clove and cook for an additional minute.
  3. Add roughly chopped vegetables of your choice and enough broth or water to cover them.
  4. Bring the liquid to a boil, then reduce the heat to a simmer. Cook until the vegetables are tender.
  5. Adjust the seasoning, and blend the soup if desired. Serve with fresh herbs and a dollop of sour cream or yogurt.
