This stew is a delicious combination of beef, potatoes and coriander, with a hint of West African spices. Perfect for a cold winter night, this hearty stew is sure to warm you up.

Ingredients

  • 2 tablespoons vegetable oil
  • 500g beef, cubed
  • 2 onions, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons grated fresh ginger
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cumin
  • 2 tablespoons tomato paste
  • 2 potatoes, cubed
  • 2 carrots, cubed
  • 2 cups beef broth
  • 2 tablespoons freshly chopped coriander

Steps

  1. Heat the oil in a large pot over medium heat.
  2. Add the cubed beef and cook until browned, about 5 minutes.
  3. Add the onions, garlic, ginger, coriander, and cumin and cook until fragrant, about 3 minutes.
  4. Add the tomato paste and cook for a few minutes.
  5. Add the potatoes and carrots and cook for 5 minutes.
  6. Pour in the beef broth and bring to a simmer.
  7. Simmer for 30 minutes or until the beef and vegetables are tender.
  8. Stir in the freshly chopped coriander and season with salt and pepper to taste.
