A fragrant and delicious vegetable stir-fry made with your favorite protein and the balance of sesame oil.

Bring the tastes of Asia to your kitchen with this vegetable stir-fry! This vegetarian-friendly dish is quick and easy to whip up and is customizable with your favorite protein. Balanced with the rich flavors of sesame oil and garlic, it's sure to please every palate.

Ingredients

  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 2 carrots, cut into thin strips
  • 1 bell pepper, black or red, diced
  • 1 zucchini, cut into thin circles
  • 8-10 mushrooms, sliced
  • 1 cup of any preferred protein (tofu, chicken, beef, etc.)
  • 2 cloves garlic, minced
  • 1 teaspoon freshly grated ginger
  • 2 tablespoons soy sauce
  • 1 teaspoon honey
  • 1 teaspoon red pepper flakes
  • 2 tablespoons sesame oil
  • Salt, to taste
  • Chopped scallions and sesame seeds, for garnish

Steps

  1. Heat the vegetable oil in a large sauté pan over medium-high heat. Add the onion and sauté for several minutes until translucent.
  2. Add the carrots and bell pepper and sauté for 5 minutes.
  3. Add the zucchini and mushrooms and stir-fry for another 4-5 minutes.
  4. Add the protein of choice and stir-fry for an additional 3-4 minutes.
  5. Add the garlic, ginger, soy sauce, honey, and red pepper flakes and stir-fry for 2 minutes more until everything is well combined and all vegetables and proteins are cooked through.
  6. Remove from heat and stir in the sesame oil. Season with salt, to taste.
  7. Serve the stir-fry with scallions and sesame seeds, as desired. Enjoy!

For an extra flavor punch, add a few tablespoons of freshly-squeezed lemon or lime juice into the stir-fry at the end.
