Suya spice is probably the most recognizable spice from West Africa. It is usually used to give a smoky and spicy flavor to grilled meats.
This classic West African stew combines my native land's flavors with the smoky heat of the traditional Nigerian suya spice. The suya spice is a mix of cayenne pepper, onion powder, garlic powder, smoked paprika, ginger, and bouillon powder. I like to use a combination of beef, whole tomatoes, and vegetables to make this a hearty and filling meal. The stew is traditionally served with jollof rice or boiled yams.
For an extra smoky flavor, try using smoked paprika instead of regular paprika in the suya spice mix.
