Grandma's Classic Gnocchi is a comforting Italian pasta dish that is perfect for a cold winter's day. I remember watching my Grandma create this dish every Sunday when I was young. I still make it today in her honor. The best part of this dish is the handmade potato gnocchi which melts in your mouth. It's served with a simple and hearty sauce made of onion, spinach, and tomatoes. Traditional Italians wouldn't eat this without grating fresh parmesan cheese on top.

Ingredients

  • 500g potatoes
  • 200g plain flour
  • 2 eggs
  • 1 onion
  • 1 clove garlic
  • 300g baby spinach leaves
  • 500g tinned chopped tomatoes
  • 2tbsp Parmesan cheese
  • salt & pepper to taste

Steps

  1. Peel and boil the potatoes until tender. Drain and mash until smooth.
  2. Place the potatoes in a bowl along with the flour and eggs. Knead the mixture until it comes together as a firm dough.
  3. Roll the mixture into a log and cut off bite-size pieces. Then, using a fork, roll the pieces into balls.
  4. Bring a large pot of salted water to the boil and add the gnocchi. When the gnocchi rises to the surface, they are done. Remove and set aside.
  5. Using garlic and onion, sauté in olive oil until fragrant. Add the spinach leaves, tinned tomatoes, and Parmesan cheese. Simmer for 10 minutes.
  6. Add the gnocchi to the sauce and season with salt and pepper. Cook for 2 minutes more.
  7. Serve the gnocchi, topped with parmesan and extra virgin olive oil if desired.

Add some extra love

If you have any leftover gnocchi, they can be cooked in a frying pan with a little olive oil. This will give them a crispy texture.
