With scialatielli being a traditional short ribbon pasta, the dish is completed with a spiced pork sauce and a spicy Calabrian version of the sausage known as 'nduja; a soft spreadable salami. Combined together, the ingredients boast a huge array of flavors and aromas. Delicious!

Ingredients

  • 500g scialatielli
  • 100ml white wine
  • 300g pork shoulder
  • 70g 'nduja
  • 2tbs extra virgin olive oil
  • salt and pepper

Steps

  1. Bring a large pot of salted water to a boil.
  2. In a large pan, heat the extra virgin olive oil over a medium heat.
  3. Add the pork shoulder and fry until lightly browned, about 5 minutes.
  4. Add the 'nduja and cook for another 2-3 minutes, stirring to combine.
  5. Add the white wine and simmer for 10 minutes.
  6. Add salt and pepper to taste.
  7. Add the scialatielli to the boiling water and cook for 10 minutes, stirring occasionally.
  8. Drain the pasta and add to the pork and 'nduja sauce.
  9. Stir until combined and serve.
