Shiitake Mushroom Sushi is an artistic blend of earthy flavors and delicate textures, a tribute to traditional sushi making.

Did you know?

Shiitake mushrooms have been cultivated in East Asia for over a thousand years and are revered for their rich umami flavor and numerous medicinal properties.

In the tranquility of a minimalist Japanese kitchen, a dish that celebrates the harmony of earth's offerings and the skillfulness of human touch is born. Shiitake Mushroom Sushi is an expression of simplicity mingled with profound flavors that seek to elevate the humble ingredients into an art form.

Imagine the earthy tones of shiitake mushrooms gently sautéed, soaking up a marinade of soy sauce and mirin, their savory essence heightened by the sweet, acidic balance of seasoned sushi rice. All these elements come together, enveloped by a sheet of crisp nori, creating a delightful contrast of textures. Each bite transports you to a serene Japanese garden, where every element is meticulously cultivated and cared for, much like the preparation of this sushi. With every roll, slice, and serve, we pay homage to the timeless traditions of sushi making, finding beauty in the subtleties of flavor and form.

Ingredients

  • 200g sushi rice
  • 60ml rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt
  • 150g fresh shiitake mushrooms
  • 2 tbsp soy sauce
  • 1 tbsp mirin
  • 4 nori sheets

Steps

  1. Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions.
  2. Combine the rice vinegar, sugar, and salt in a small bowl. Warm it slightly until the sugar dissolves. Gently fold this mixture into the cooked rice, then allow it to cool to room temperature.
  3. Slice the shiitake mushrooms and sauté them in a pan over medium heat until they begin to soften.
  4. Add soy sauce and mirin to the mushrooms, and cook until the liquid is absorbed and the mushrooms are fully coated.
  5. Place a nori sheet on a bamboo sushi mat, and gently spread an even layer of the seasoned rice over the nori, leaving a small border at the top edge.
  6. Arrange a line of the shiitake mushrooms along the bottom edge of the rice.
  7. Roll the sushi tightly using the bamboo mat, then seal the edge with a little water.
  8. With a sharp, wet knife, slice the sushi roll into bite-sized pieces and serve.

Add some extra love

For an added touch, sprinkle sesame seeds over the rice before rolling, or serve with a side of pickled ginger and wasabi for an authentic sushi experience.
